Over the years I have had my share of difficulty eating vegetarian. For me, I haven’t had meat cravings or things like that, so it has been challenges with eating well and finding good things to eat. Here I’ll look back at some of the mistakes I have made. This post will look at the mistakes – I’ll cover how to fix them in a future post.

If you are interested in trying to live vegan I recently found a great resource for that. No matter where you are coming from currently – if you are vegetarian or not – you may be considering eating vegan for health or environmental reasons. I have found that the difference between vegetarian and vegan is significant, and for me has been difficult. Eating out (unless you are in a large metropolitan area) is hard and very limiting and making quick and easy vegan meals is a challenge. Patty Knutson, aka Sassy has a great resource with her Get Sauced With Sass! vegan sauce-making course. She will tell you how to make sauces and learn the basics of construction. Insead of wrestling with recipes, you will learn how to craft things for yourself. Adding sauces to plain vegetables is a great way to make them taste better and not be boring. And I certainly know that sauces I have tried to make have just plain sucked – my kids will vouch for that!

These simple burritos can be made in 5 minutes in the microwave. Using black bean dip makes it easier than cooking up beans and they taste delicious.

Ingredients
Ingredients:
- Corn tortillas
Black bean dip
Shredded cheese*
Guacamole
Sour cream*
* = substitute vegan cheese and omit the sour cream for vegan version.
I use corn tortillas because we try to minimize wheat. Substitute flour tortillas if wheat/gluten is ok for you.
Also you can add lettuce or other fresh vegetables if you have them on hand.
Being vegetarian isn’t easy and it takes time and effort to prevent yourself from becoming a junk food vegetarian. By this, I mean eating crappy snacks and things because it is harder to make a full meal or find something filling. I was a junk food vegetarian for a while and managed to get about 40 pounds heavier than I wanted to be. Stopping the constant junk food snacking is essential to keeping fit and healthy.
